225g softened lacto free butter
250g gluten free self raising flour
Juice and zest of 1 lime
1 teaspoon of xantham gum powder
Beat the butter until soft and fluffy.
Add the honey and eggs and beat again.
Add the flour and xantham gum powder gradually whilst beating.
Add lime juice and zest and mix through.
Pour the batter into a greased and lined tin and bake at gas mark 4 for approximately 40 minutes or until cooked through, check with a skewer.
Ingredients for lime drizzle:
Juice of 1 lime
2 tablespoons of honey
Whilst the cake is cooking put the honey and lime juice into a saucepan and heat gently to combine.
As soon as the cake is cooked poke holes throughout the sponge with the skewer and pour you lime drizzle over the sponge. Allow to cool for 10 minutes them take out of the tin and place on a cooling rack.
