Homemade Potato Salad

This is so easy, and a great way of using up extra potatoes, either that have been cooked and not eaten (I've used left over roast potatoes from Sunday's dinner) or ones that are going a bit soft and need using up. 

Ingredients: 

           Potatoes, cooked and left to go cold. 

           Mayonnaise 

           Chopped chives (optional)

Method:

            Chop up any larger potatoes into nite sized chunks. 


        Squeeze in some mayonnaise. 


         Add herbs if using and mix up


Serve with a salad and enjoy.
