GF, SyF, NF, DF, Lemon Swiss Roll

I needed a quick pudding, and as I had a batch of freshly made lemon curd in the fridge I thought I'd make a Swiss roll with a zingy twist.

Ingredients: 

           75g gluten free self raising flour

           40g honey

           3 eggs

Method:

          Beat your eggs. 


           Add the honey and flour and beat well. 


        Grease a shallow tin, line if you can, I appear to be out of baking paper. 

       Pour your mix onto the tray and bake at gas mark 6 for 7-10 minutes. Keep an eye on it as it is so thin it catches easy. 

       Allow to cool for a few minutes then turn out onto some cling film. 

       Spread lemon curd over the top and roll, don't be scared, it's not that hard, although too tricky to manage to take a picture at the same time!
