Leek and Potato Soup

When soup came round on our planner C asked if we could do leek and potato soup instead of sweet potato and butternut squash so that's what I did.  I didn't follow a recipe and made a big batch so we could freeze some. 

Ingredients: 



                Lots of potatoes ( I used approx 12)

                4 large leeks

                4 carrots 

                3 vegetable stock cubes

                2 large saucepans 3/4 full of water (once the potatoes are in)

Method:

            Put some water on to boil in each pan. 

            Peel your potatoes and chop into small chunks. 

            Put potatoes in to boil, add stock cubes. 

           Peel and chop the carrots and add to the potatoes. 

            Peel outer layer of leeks and wash, chop into slices. 

            Fry in a little oil until just turning brow. ( You will need to do this in batches)



            Add the leeks to the potatoes and simmer for about 45 minutes. 

            Use a hand blender to carefully blitz the soup, you can leave some chunks or blitz it completely smooth, it's up to you. 



            Serve and enjoy.
