Homemade Shepherds Pie

This is one of my favourite dinners, and ever so easy to make.

Ingredients:

                  750g minced lamb

                  1 onion, diced

                  4 carrots, chopped

                  Peas would be usual but as I can't eat them we use sweetcorn

                  Gluten free stock (vegetable)

                  Potatoes (enough to make mash to cover the top of your pie, will depend upon the size dish you use)

                  A splash of milk

                  A knob of butter


Method:

              Fry your onions, then add your mince and fry until browned and drain the fat off.  I do this in a sauté pan so that I can then add the stock to the mince.

             Add stock and carrots and sweetcorn (be creative and add whichever vegetable you fancy/have in the house)

             Boil your potatoes, then drain water, add a little milk and butter and mash

             Spoon your mince into an oven proof dish



             Put your mash on top and make pretty marks with a fork .



Cook at gas mark 5 for 20 minutes, or put in a low oven and have in an hour or so.  I do this, I make the pie up before the school run, place in the oven as I leave to get the children, so about 3.15pm on about gas 3 then we eat about 5pm, it means you can have a lovely home cooked dinner without the hassle when the children are home.
